So life did suck
After kindergarten to grade 13 and 1.5 years of university the racism I endured in schools made me question life in crazy Americas.
My family is OK.
But when I mentioned in volunteer group in 2nd year university I wanted to help develop my homeland, everyone stopped me basically. They said no to helping.
Then I realized the problem.
For the last 14.5 years of schooling the Chinese, South Asians, Filipinos and Canadians did not want me educated. They just wanted me generally educated to clean and wash and serve them.
Basically the students at university want me to live to make spring rolls (not the artery clogging fried ones with pork and mushroom filling) fresh on the spot with fresh peanut sauce or hoisin. Spiced with good Huy Fong Siracha.
They wanted fresh, fresh, fresh spring rolls with garden vegetables. That was my job I think they wanted me to do until I am 81. Which isn’t bad. Healthy food served to hard working higher hiearchy.

That is the problem with 2nd generation children of SEA groups. If the kid is told to not to follow their dreams and become just a number by the time they get to second level university they are surround by the mob of spring roll eaters. The spring roll eaters and sometimes banh xeo eaters demand so much fresh nutrition and garden freshies that you have no time to concentrate on yourself and your own development of your own dishes and experimentation in the kitchen and in life.
They will do whatever they can to make you fail and get out of schools and science industry so you serve the best spring rolls on this side of the world. It is important they say. Spring rolls are the alternative to hot dogs, bologna and cheap egg rolls at Chinese restaurants and buffets.
Spring rolls are the healthy alternative which is deeply needed in society. And because they are prone to drying up and get withered easily and even moldy, young men and women who are from Vietnam must be on the ready to produce them. That is the feeling I get from these people. They work so hard as higher ups in the hierarchy, the kindest thing I could do is make fresh spring rolls and peanuts sauce or hoisin or even nuoc mam (umami sweet tangy spicy prepared fish dip) sauce for them for their hard lives.
I can sense they are so weathered day by day and I as a newcomer to the country have no idea how hard it is to maintain a way of life like before.

I come here to Canada / actually born here really and get treated like I am kind of worthless and dim.
But when we do conversate, the food comes out and things are nice and well. Fish sauce, fish, shrimp, huge catfish roasted over a open flame. It makes people come together.
Most people never heard of such combination of foods and ingredients in Vietnamese cuisine. To be honest it is forgotten over the synthetic processed foods of the Americas.
But god darn it, if you could take the extra $3 to $5 to experience Vietnamese fresh foods you be amassed how this combinations exists in front of your eyes, nose and mouth.
It is simply an art of sight and flavours and smells.
